“The beet is the murderer returned to the scene of the crime. The beet is what happens when the cherry finishes with the carrot. The beet is the ancient ancestor of the autumn moon, bearded, buried, all but fossilized; the dark green sails of the grounded moon-boat stitched with veins of primordial plasma; the kite string that once connected the moon to the Earth now a muddy whisker drilling desperately for rubies.” Tom Robbins, Jitterbug Perfume
I’m not sure I can describe beets any better than Mr. Robbins, but I am officially obsessed with them. The dark red, bloody meat acts an awesome foundation for juice. The juice is deeply full of earth and the result is a deep connection with the ground. The beet roots you down and let’s you know its good to be grounded every once in a while. ALL HAIL THE BEET.
And this brings me to my favorite winter juice.
Awesomely Bloody Beet Juice
2 awesome beets cleaned
1/4 part of celery root
1/2 an apple
Throw everything in the juicer. This serves one, but should probably be doubled.
